In the ancient process of "natural leavening" lies the secret of our sourdough. Everything originates from the "mother": a dough consisting of high quality water and flour that, left to rest for several hours at room temperature, creates the conditions suitable to favor the fermentation process thanks to the development of bacteria and lactic ferments.
